My Favourite Tuna Melt

When I was growing up, so many of my favourite meals had tuna fish in them. From tuna pasta, to tuna sandwiches to tuna salad, I loved it. As I've grown up, I still get nostalgic thinking about just a good ol' school lunch. Tuna sandwich, crisps, and fruit. This is a slightly fancier version of a classic tuna panini, but a hybrid with a grilled cheese sandwich. I think that there's loads of ways to improve this, sometimes I like to add dill, and other fix ins. For example, this time, I added sweetcorn, but I also like to add chopped red onion, chopped celery or chopped dill pickles. Adding these in give a tangier flavour which I really like, but I just added what I had. This is a great sandwich to eat, and is pretty accessible, with ingredients that I already had in my pantry.



Recipe:

Cook Time: 5-10 mins

Serves: 2


Ingredients:

  • 2 Tins of Tuna, Drained

  • 1 Small Tin of Sweetcorn, Drained

  • Mayo (About 40g, or 1/4 cup, but I eyed this)

  • 2 Tbsp of Ketchup

  • Lemon Juice (I used this from a bottle, but should be enough equal to half a lemon)

  • Salt, Pepper and Paprika to Taste

  • 3 Tbsp of Butter

  • 4 Slices Bread (You can use any you like, I used regular Warbutons soft white sliced, but it would be amazing with country bread or even brown/wholegrain bread)

  • Cheddar Cheese, Sliced

Directions:

  1. In a bowl, mix together the tuna, mayo, lemon juice, ketchup and seasonings. This is the time to add any dill or herbs that you want to add.

  2. Add the sweetcorn, and mix together. This is the perfect time to add any chopped dill pickles, red onion, etc.

  3. In a pan over medium-low heat, add a bit of the butter in, just enough to coat the pan. Put one slice of bread in the pan, and toast one side of the bread until it's golden brown, but not too dark as we'll be putting this over the heat again later. Take this off the heat.

  4. Put about another bit of the butter into the pan, and put a new slice of bread over the top. Dollop the tuna mayo mixture over the top, making sure there's a small border of the bread, since this will deflate a bit, and will probably fall out the sandwich.

  5. Arrange the cheese slices over the top of this, reduce the heat, and put a lid on top. This will trap steam inside, making the cheese melt. When the cheese is just starting to melt, add the second slice of bread, with the toasted bit on the outside. Pop the lid back on.

  6. Let the sandwich go over the heat, until the cheese is melted, flipping halfway.

  7. Take this off the heat, slice and enjoy!
